Seven Layer Bars
Everyone has a favorite seven-layer bar recipe. This one is my family’s favorite Christmas version of an old standby. The butterscotch and pecans are a nice flavor combo, and the Christmas chips on top lend just the right festive touch!
1 stick butter or margarine
3 sleeves graham crackers, crushed
1 package butterscotch chips
1 cup pecans
14 oz. sweetened condensed milk
1 cup shredded coconut
1 package Christmas shaped baking chips
Preheat oven to 350F. Melt butter and pour into a 9×13 pan, tilting to coat sides. Sprinkle graham cracker crumbs evenly over bottom and stir to coat with butter. Use a spoon to flatten crackers into a crust. Sprinkle butterscotch chips, followed by pecans, then drizzle condensed milk over the top. Sprinkle with coconut followed by Christmas chips. Bake 20-25 minutes, until browned and firm. Allow to cool before cutting into bars.
We knew it was going to be a good day when my mom made these back in the day. She’d add just the right amount of sugar and cinnamon and bake just until golden. Then we’d devour the flaky, lightly sweet, heavenly pastries, leaving nothing but crumbs for my dad. Yes, those were the days!
2 cups flour
¾ tsp. salt
½ cup shortening
½ cup butter or margarine
½ cup ice water (must be very cold!)
½ cup sugar mixed with ½ tsp. cinnamon
Sift flour and salt together to combine well. Cut in shortening using a pastry cutter until mixture is coarsely crumbly. Sprinkle ice water over the mixture a tablespoon at a time, tossing to mix. Don’t over mix or your pastry will be tough. Cover and refrigerate 4 hours or overnight. Roll out dough on a floured board to ½ ” thickness and cut into slices. Place on an ungreased cookie sheet and sprinkle cinnamon/sugar mixtures over the top. Cut into slices, place on an ungreased cookie sheet, and bake in a 350F preheated oven for 8-10 minutes until golden brown and slightly curled. Serve fresh out of the oven with ice cream or gently remove to cooling racks and allow to cool.
White Chocolate Snack Mix
This is my husband’s favorite holiday treat; he asks for it every year! Measurements don’t have to be exact – if you like lots of peanuts, add a few more; if you prefer chocolate Chex, add those in place of the rice. Make this recipe your own, and your family will ask for it every year too!
1 medium sized bag regular candy coated chocolate bits (holiday colored M&Ms work great)
1 cup peanuts
2 cups pretzels
1 cup almonds
1 cup corn Chex
1 cup rice Chex
1 bag white chocolate chips
In a large bowl, mix all but the white chocolate chips. Spread on waxed paper. In a saucepan, melt white chocolate chips over low heat, stirring frequently until smooth. Pour over the mixture on waxed paper, stirring lightly to coat. Allow to cool completely, then break apart into candy/bark chunks. Great for parties, pot lucks, or just as a treat for Christmas.
