If you spend any time cooking at all, it is so hard to keep fresh ideas on hand. These are a great easy meals with a lot of variety so you can ” kick it up a notch.”
1 lime, 3 tablespoons soy sauce, 3 tablespoons of peanut butter, 1 tablespoon of brown sugar, 2 teaspoons gingerroot, (grated) 2 cloves of garlic,( pressed) 3/4 lb of turkey breast ( cut into strips) 6 whole wheat tortillas, 6 tablespoons Neufchatel (or cream cheese) 3 tablespoons of cilantro(chopped) and 3 tablespoons of green onions, chopped.
Combine lime juice, soy sauce, peanut butter, brown sugar, ginger, and garlic. Add turkey and mix well. It’s best if it gets to sit for an hour in the fridge. On each tortilla spread a tablespoon of cheese. Drain juice if needed and line up along middle of tortilla. Sprinkle with cilantro and green onions, roll, and eat.
This recipe sound gross, with odd combos of ingredients, but it is delicious!!! It is easy and good.
Beef and Spinach Pitas
1 lb of extra lean ground beef, 1 large onion, (chopped) 2 cloves of garlic, (pressed) 8 oz of mushrooms, (sliced) 1 bag of spinach, 1’2 teaspoon of thyme, salt and pepper, 6 whole wheat pitas, 1 chopped tomato, sour cream
Cook beef and onion over medium high heat till browned. Drain and blot. Add garlic, mushrooms, spinach, and thyme and cook till spinach wilts. Spoon into pitas and top with tomatoes and sour cream.
Another favorite, easy and delicious. Pita pockets are perfect for this.
2 large chicken breasts, (cooked) dill pickles, (chopped) 3 green onions, (chopped) 1/3 cup mayo, 1/3 cup sour cream, 2 tablespoons of capers, 1/2 teaspoon pepper, and 1/2 cup pecans, (chopped) 3 hard boiled eggs, and 2 tablespoons of fresh dill.
Cut chicken up and mix together with everything except pecans. Sprinkle with pecans before serving.
This is the first chicken salad recipe I ever liked. It is super good. The green onion tones down the onion taste and the capers really add to the flavor.
3 teaspoons of Tabasco sauce, 3 tablespoons of soy sauce, 6 fish fillets, 1 tablespoon of butter, 1 pint of cherry tomatoes, (halved) 1/2 cup Kalamata olives, 1 teaspoon garlic powder, salt and pepper.
Combine tabasco and soy. Dip the fish fillets on both sides and set aside. Heat butter in a skillet over medium heat. Add the fish, set aside, and keep warm. Add tomatoes and olives to the pan and saute for about a minute. Add garlic powder, salt and pepper. Top the fish with mixture and serve.
This meal is super fast because fish hardly takes any time to cook. I serve it on rice with some kind of vegetable or salad and some wine. Yum yum.
(batter) 1 cup of flour, 1/4 cup butter, 1/2 teaspoon salt, 2 eggs, (well beaten) 1 cup milk. Remainder of ingredients are: 6 chicken breasts, 2 jalapenos, 1 tablespoon diced pimientos, 1 tablespoon chopped onion, salt and pepper to taste, 1 and 1/2 lbs swiss cheese, grated, and 2 cups of whipping cream.
Mix flour butter, salt, eggs and milk for crepe batter. i tablespoon of batter will make 1, 4 inch crepe. Cook like a pancake in a small skillet. Turn crepes once and cook until done, not brown.
Boil chicken in water until tender. Bone and slice into 1 inch pieces. Add chopped jalapenos, pimientos, onions, salt and pepper. Mix well. Add 1 lb of cheese and stir well. Place about 2 tablespoons of chicken mixture in center of each crepe. Roll and place in a large baking dish. Sprinkle the rest of the cheese over all and pour the cream all over. Cook at 350 until cheese is melted and serve.
This meal takes longer prep, but is really tasty.
Broiled Salmon In Wine Butter
1 1/2 cups dry white wine, 3 tablespoons minced shallots, 3tablespoons whipping cream, 1 1/2 cups unsalted butter, chilled and cut into small pieces, juice of 1/2 lemon, salt and pepper to taste, 8 salmon steaks.
Boil the wine and shallots in a small, heavy saucepan until liquid is reduced to 2 tablespoons. Remove from heat. Whisk in cream and two pieces of butter. Over low heat, whisk in remaining butter, one piece at a time. Broil salmon steaks until lightly pink. Spoon sauce over steaks. I like to add capers to the sauce for extra flavor.
Butternut Ravoli Stew
2 tablespoons butter, 2 onions,(chopped) 3lbs butternut squash,( stab, microwave to soften, peel, deseed, and cube) 1/2 cup white wine, 3 cans chicken broth, 1 pinch nutmeg, 1 pinch cinnamon, 1 pinch ginger, 1 lb frozen ravioli, cheese filled, #/4 Neufchatel cheese, 3/4 cup half and half, salt and pepper to taste.
In a soup pot, heat butter over med -high heat. When hot and melted, add onions and saute until translucent. Add the squash, wine, and chicken broth. Add the spices. Reduce heat and simmer for ten minutes. Meanwhile cook ravioli according to package. Drain and set aside.
In a blender, blend half the stew and all the the cheese to a smooth consistency and add back to the stew. Next, add ravioli and carefully mix. Add half and half, heat till almost a simmer , salt and pepper to taste and eat. This one is a great fall recipe and my whole family loves it. With the cream cheese it is rich and delicious.
Seafood and Okra Gumbo
1/2 cup vegetable oil, 1/2 cup flour, 2 cups finely chopped fresh okra, 1 cup finely chopped celery, 1 cup finely chopped onion, 1/2 cup of green onions, 1 16 oz can tomatoes, 1 8 oz can tomato sauce, 2 10 3/4 cans beef broth and 2 cans of water, 2 lbs shrimp, peeled and deveined, 1 cup lump crab meat, 1 pint oysters, drained, 1/4 teaspoon minced garlic, 1 teaspoon black pepper, 2 teaspoons salt, 1/2 teaspoon seasoned salt, 3 bay leaves, 1/4 teaspoon thyme, 1/8 teaspoon oregano, 2 tablespoons sugar, 1tablespoon Tabasco, 1/2 teaspoon cayenne, and 1 tablespoon of dry sherry. Make a roux by combining oil and flour in a large, heavy pot. Stir constantly over low to medium heat until it is a deep, dark brown. The secret is in the roux. You want the dark color for best flavor, but you have to be careful not to burn it or it will not be good. To get the roux the right color takes about thirty minutes. Combine okra, celery, onion, and green onions. Saute in roux until tender. Add tomatoes, tomato sauce, broth, and seasonings. Simmer two or three hours. Add seafood the last ten minutes. This meal takes longer, but it is worth it.
Easy Potato Soup
1 tablespoon olive oil, 2 onions(chopped) 4 large potatoes, peeled and cubed, 3 cloves of garlic,(pressed) 2 cans of chicken broth, 1 teaspoon of thyme, 1/8 teaspoon of cayenne pepper, salt and pepper to taste, 2 cups of half and half. In a soup pot, heat olive oil over medium high heat. Then add onions and cook till clear. Add potatoes, garlic, and cook another two minutes. Add chicken broth, thyme, and cayenne pepper, and bring to a boil. Reduce heat and simmer, covered until potatoes are soft, about 10-15 minutes. You can blend or use a potato masher. ( I just used a masher) Heat soup back to a simmer, add salt and pepper, add half and half and warm till hot. Do not boil!!!! This is a great cold weather soup. I used fresh thyme and basil from my garden for better flavor. It is creamy and delicious.
Busy Day Chops
1 cup of ketchup, 1/2 cup water,3/4 cup brown sugar, 1/4 cup of lemon juice, 4 thick pork chops. Preheat oven to 250. Combine ketchup, water, brown sugar, and lemon juice. Bake ,uncovered, for 2 1/2 to 3 hours. This recipe is good, but also easy because you can put it in and leave it cooking while you do other things. There is very little prep. You can serve it with a salad and rolls and you are ready to go.
