After Thanksgiving and Christmas, everyone has had enough fruitcake and pie to last the rest of the year. In addition, most people are probably sick of being in the kitchen. Thus, here are five of my favorite easy and unexpected desserts for New Years.
Raspberry Shortcake Sundaes
Using tall wide glasses, layer angel food cake, with raspberries, ice cream, and whipped cream. Repeat the process until you get to the top of the glass. Then, shave off curls of dark chocolate to top these little creations. Strawberry shortcake will be so jealous.
Chocolate dipped fruit skewers are fun and light for everyone. For this I like to buy the discs of chocolate that are sold at candy stores and party stores like Party City. First, cut pineapple and store bought pound cake into one inch squares. Then clean and cut off the tops of the strawberries. Then, in separate pans, melt white chocolate, dark chocolate, and milk chocolate. Add a tablespoon or two of water to each pan and melt on low heat. When the chocolate is melted, dip the pineapple in the dark chocolate, the cake in the milk chocolate and the strawberries in the white chocolate. Carefully skewer one piece of fruit for each kabob.
These fire cracker cupcakes will get everyone in the New Year’s spirit. First, take your favorite type of cake mix and cook according to package directions. Then frost with vanilla icing. Finally, take red, green and blue dec a cake gel and make a bursting firecracker on each cupcake.
Mint Football Brownies
These are a refreshing twist to the regular old brownie in a cute football shape. Using a package of fudge brownie mix (like Betty Crocker), follow the directions on the side of the box. When finished, add half a teaspoon of peppermint extract to your mix. Cook according to package directions and then cut into a football shape. using a cookie cutter. I saw a great one at the cookiecuttershop.com. When cooled, make white decorating icing with two cups of powdered sugar, one stick of butter and two tablespoons of water. Put into a plastic bag and snip off a tiny piece of the corner. Pipe football laces onto footballs.
In the spirit of The Rose Parade, take a box of lemon cake mix and make according to directions. When finished, glaze each cupcake with lemon curd, frost with cream cheese frosting and top with an edible flower, like sweetfield’s crystal violas. Tip do not just go and pluck any old flower from your garden because some are poisonous.
