This is a fairly simple recipe to make and much healthier than the version using fresh or frozen chicken liver, beef or calves liver. For those individuals who love chopped liver or pate as a spread this version does not contain nearly the same amount of cholesterol as when making it with chicken, beef or calves liver and surprisingly it is fairly palatable and it is a vegetarian dish. Great as an appetizer or snack at a party. It does not take that much time to make either.
You need the following ingredients:
1/2 pound of fresh green string beans
1 cup of English walnuts after they have been ground to a fine consistency
2 raw eggs
1 cup of diced onions
salt and pepper to taste
The first thing that you need to do is to cut off the ends of the fresh green beans for you do not want the stems in your completed dish. Now rinse off the fresh green beans under cool water at your sink to clean them properly. Cut the green beans into pieces and once this is completed place the fresh green beans into a container and cook them either on top of the stove or in the microwave until they are tender. Now drain the water from the container that you have cooked the green beans in and set the now cooked green beans aside. You need to let the cooked green beans cool until you are able to touch them without burning your hands.
Take two raw eggs and put them in a pan of water on the stove and hard boil them for approximately 10 minutes or until they are definitely hard boiled. Drain the water from the eggs, peel them and set them aside for later use.
You need one cup of fried onion to be used in the recipe. So you need to take, depending on your taste,
1-2 large onions and peel the outer skin off of them and than dice the onions into small pieces. Place either butter, margarine or cooking oil of your choice into a frying pan. Remember that we are trying to make a dish that contains less fats and cholesterol so I either use margarine or a cooking oil that is low in saturated fats such as Canola oil. One note here, I do not think that olive oil would be a good choice for the oil to cook the onions in for it would give the recipe an entirely different taste. Now you need to set the temperature on the stove fairly high so that when the cooking liquid becomes hot it will seer the onions, once they are placed into the pan. Go ahead and place the diced onions into the frying pan with the already heated oil, margarine or butter. Cook the diced onions until they are soft and also golden brown in color. Remove the cooked onions from the oil and set them aside as well.
Take the English walnuts and grind them until they are fine in texture. You need to have one full cup total of English Walnuts, and now set them aside to be used later on in the recipe.
Now that you have cooked or ground or chopped all the required ingredients you are ready to actually make the mock chopped liver mixture.
In a large mixing bowl you will now add the finely ground walnuts and the golden brown cooked diced onions together. Mix these two ingredients around together in the bowl. Using a grater you need to grate the two hard boiled eggs into this mixture and than stir this around together also. You do not want large chunks of egg, you want the eggs to be grated so that they will mix well in your mixture and be able to be spreadable when everything is combined together in the final end product.
Take the cooled, cooked fresh green beans and squeeze out any remaining water from the green beans. You can either mash them with a fork, or your hands or even try grating them with the same grater that you used to grate the hard boiled eggs. I generally just mash them with my hands until them are fairly mashed up. Keep in mind that we are making a spread here like the consistency of chopped liver or pate would be, to be able to spread this mixture on your choice of crackers or another type of product that you would serve a spreadable mixture on as an appetizer. Once the cooked and cooled green beans are now mashed up put them into the mixture that you have already combined in the mixing bowl of cooked and browned onions, finely ground walnuts, grated hard boiled eggs. Mix of all this together and now add salt and pepper to taste. You now have a vegetarian form of chopped liver also known as mock chopped liver. Chill and serve as an appetizer with crackers, bread, lavosh etc. and enjoy. This would be great as an appetizer or for a party snack.
